Once on the surface, the heat then seers the sugar to the surface of the wood creating a darker color. This color may be dark brown to reddish brown. The resulting bamboo wood is incredibly gorgeous. And if that wood is then made into a cutting board by a talented artisan, the result is a cutting board that can be displayed as a fine art piece. But again, don't let that stop you from using it. Cutting, chopping, slicing, and dicing are the names of the game with your bamboo cutting board.
